If you need to change, move or remove any gas pipes for your restaurant's cooking equipment, a Licensed Master Plumber must do the work. For range-hood (Ansul) systems, a Licensed Master Fire Suppression Piping Contractor must install and test them with an FDNY inspector.
A utility company can only give you gas services after the FDNY inspects the Ansul systems and the Department of Buildings (DOB) inspects the gas-fueled cooking equipment. It's a good idea to work with your contractors to make sure you have the gas services you need before you open your restaurant.
- FDNY inspections: The Fire Department of New York (FDNY) checks range hoods in restaurants and other places that cook food. A licensed professional must install these range hoods and other fire safety equipment.
- Fire extinguisher rules: FDNY regulations require a certain number and type of portable fire extinguishers in your place of business. The rules also say where to put them. This depends on your building and business type.
- Check with a New York State licensed professional: Find out which laws apply to your proposed construction.
- Registered architect or licensed engineer: You need a registered architect or licensed engineer for most major construction and alterations.
- Hire licensed professionals: Hire licensed professionals to install gas pipes, cooking equipment and fire suppression systems. First, a registered architect or licensed engineer must submit complete plans.
- Approval and installation: Once plans are approved, hire a licensed Master Plumber and a licensed Fire Suppression Piping Contractor. They will install the gas pipes, equipment and Ansul system. Note: Pizza ovens do not need an Ansul system. FDNY will also check the fire extinguishers.
- FDNY inspection: After a successful FDNY inspection, get a letter from the FDNY. This letter will say that each Ansul valve has passed all checks. Give this letter to the Department of Buildings (DOB).
- DOB inspection: The Master Plumber must call the DOB for an inspection. All gas cooking equipment must be fully installed. The DOB Plumbing Unit will check it before they allow a utility company to provide gas.
- Gas authorization approval: After a successful DOB inspection and receipt of FDNY approval letters, the gas authorization is approved online. Gas companies can check this system to confirm compliance.
- Start gas services: Gas authorization does not start gas services automatically. The business owner or their representative must contact the utility service. They need to set the gas meter, create a service account and set the start date.
